Flavors of nature, ancestral knowledge, and fire as the heart of the experience

The experience "Into the wild” is a cooking workshop that takes you into the world of wild cuisine, where ancestral knowledge, respect for nature, and primal open-fire cooking come together. Through a hands-on experience, you’ll learn how to identify, select, and use wild and local ingredients, while uncovering small but essential secrets that make a remarkable difference in the flavor, texture, and character of each dish.

Led by Jurij Kavčnik – forager, hunter, and chef, who draws inspiration directly from nature, you’ll gain valuable skills and practical knowledge for preparing wild food in a modern yet deeply respectful way. This workshop is more than a cooking class—it is a fully immersive experience, where stories, flavors, and culinary craftsmanship unfold around the fire, culminating in a signature main course slow-cooked under an iron bell covered with embers.

How the experience unfolds

  • Welcome in nature, with a short introduction to the philosophy of the experience, followed by the preparation and tasting of a cold appetizer (venison carpaccio, game salami, or similar).
  • Shared fire preparation, learning the basics of open-fire cooking and traditional techniques.
  • Cleaning, preparing, and cutting the ingredients (by prior arrangement: game, fish, octopus, etc.), with an explanation of their origin and use.
  • Assembling and sealing the cooking iron bell, which is then covered with glowing embers and left to slow-cook.
  • Preparation and tasting of a warm starter, while the main course cooks under the embers (approximately 90 minutes).
  • A feast beneath the pine trees – the main course cooked under the bell, paired with a glass of selected local biodynamic wine.
  • A closing moment by the fading fire, with tea made from wild olive leaves and dessert.

The meeting point is right by the sea, at the end of Jernej Canal, next to the Piran Salina Nature Park. Drive along the sea to the very end of the Canal and turn left just after the large old olive tree. Entrance to the courtyard is through large blue gates, where parking is available. Please arrive at the scheduled time. We will not be able to wait for those who are late.
